CITREM can be widely used as the emulsifier,stabilizer,and antispattering agent and as the synergistic component with anti-oxidants within food industy. 

Functional uses: 
1.citrem is used as emulsifier, penetrant, stabilizer, quick-dissolving agent, antistaling agent, wetting agent, dispersing agent in ice cream, rice and flour, baked products, sweets, dairy products, and meat.
