Chemical properties Light yellow to pale reddish brown powder or flakes. Those uncrushed were light yellow to reddish-brown, translucent, keratin-like droplets of different sizes, or irregular fragments with a slightly crystalline surface. Sometimes mixed with a small amount of dark bark debris. Slight acetic acid odor. The taste is thick and slightly acetic acid. Insoluble in water, but deacetylated with an alkali solution into an aqueous solution. Swells into a gel in water. Insoluble in ethanol. Swell in 60% ethanol. The 1% suspension had a pH of 4.5 to 4.7 and a viscosity of about 3.3 Pa·s. It can be decomposed by heat and the viscosity decreases. It is unstable when it is above 85°C. Can absorb 100 times its own volume of water.

 

Use Thickeners, stabilizers, emulsifiers, moisturizers. Precipitation of ice crystals in frozen products and precipitation of fat and gravy in sausages can be avoided.
